Makes 9
From “Martha Stewart Cupcakes”
Ingredients:
1 c sifted cake flour (not self rising)
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/3 tsp cinnamon
2/3 c mashed very ripe bananas (1 1/3 bananas)
1/4 c buttermilk
1/4 tsp vanilla extract
1/2 stick butter, room temperature
1/2 c packed brown sugar
1 egg, room temperature
1/3 c pecans, toasted, chopped
Directions:
- Preheat oven to 350 F.
- Put paper liners in muffin tins.
- Mix butter and sugar. Add eggs. Add buttermilk, bananas and vanilla.
- Add dry ingredients. Fold in pecans.
- Fill muffin cups 3/4 full.
- Bake 20 min.
- Cool. Can be frozen for 2 mo in airtight containers.
- Frost. Enjoy!
