Carrabbas’ Blackberry Sangria

This is the recipe from the restaurant Carrabbas.

1 1⁄2 liters bisanzio italian wine or 1 1⁄2 liters any other sweet red italian wine [Sutter Home sweet red wine, San Antonio Cardinale sweet red wine, Lambrusco wine, etc.)
14 ounces cranberry juice (not cranberry cocktail)
14 ounces monin blackberry syrup (you can buy this on Amazon)
6 ounces tuaca italian liqueur
2 oz Sprite

lemon slice
orange slice

Mix all liquid ingredients together and add blackberries. Refrigerate and let sit for a few hours. Serve over ice. When ready to serve, add a slice of lemon and orange.

Blackberry Pie

2 pie crusts (one for bottom, one for lattice top)

2 c flour
1 stick + 3 tbsp cold diced butter (or grated butter)
1/2 c cold water

1. Put flour in kitchenaid mixer. Mix on medium.

2. Add diced butter, one piece at a time. Mix on high.

3. Add water, very slowly. At a trickle. You might not have to use all the water. Just add water until the dough forms a loose ball and circles around the kitchenaid.

4. Wrap dough in clingwrap. Fridge at least 1 hour before using. I’d fridge it overnight.

5. I divided the dough into two 300 g balls and wrapped and fridged each separately.

(about 2 c) Blackberries (2 big cartons)
1 c sugar
3 tbsp corn starch
1/2 tsp grated lemon zest (optional)

  1. Mix filling. Let sit one hour.

  1. While filling is sitting, make 2 pie crusts.
  2. Make bottom pie crust. Add filling. Add lattice top.
  3. Bake 350 F for 50-60 min.

Strawberry Pie

Recipe (a more exact one) will be added if anyone is interested, otherwise I’m just posting pictures.

Strawberry Pie
Strawberry Pie – UNBAKED

I used two crusts from my “Easy Pie Crust” recipe (also on this blog).

I mixed strawberries (one big carton) and blackberries (three small cartons) with corn starch, sugar, a twist of lemon, and a dash of salt, and let it sit for an hour.  TASTE YOUR BERRIES. If they are tart (and I was baking in the off season, so of course the berries were tart), add more sugar. If they are sweet, add less sugar.

Baked at 350 F for about an hour (55 minutes, I think).

Served with whipped cream (my recipe: whipping cream, vanilla extract, bourbon (optional – Maker’s Mark), and sugar (confectioner’s)). Beat on high speed until fluffy and awesome. DO NOT OVERBEAT – otherwise you will make butter (if you do this by accident, don’t throw it out, that’s wasteful — sub it in for oil or butter in a recipe for cake or bread or scones or cookies or biscuits).

Otherwise serve with Haagen Daaz (yes, I’m specifying the brand, because it DOES matter) Vanilla Ice Cream.

Enjoy with a stiff coffee.
