Yield: 12 muffins
1/2 cup butter
1 1/2 cups sugar (or 1 c sugar if berries are very sweet)
2 large eggs
2 cups flour
2 tsp baking powder
1/2 tsp salt
2 1/2 cups strawberries
1/2 cup milk
1/4 c sugar for topping
- Cream butter and sugar. Add eggs and mix to incorporate.
- Sift dry ingredients together. Add to creamed mixture alternately with milk. Gently fold in strawberries.
- Spoon into paper-lined muffin pan, filling each cup 2/3 full. Sprinkle with sugar.
- Bake at 375 degrees for 20 to 25 minutes.
- Cool in pan.
