Mini Pies

Make 2 easy pie crust doughs. Fridge for at least an hour. While pie crust is in the fridge, make filling.

FILLING:

1 big carton (18 oz) blackberries, cleaned
1 carton (16 oz)  strawberries, cleaned and sliced into fours
1 tsp corn starch
1/4 tsp salt
1 tbsp sugar
twist of lemon

Mix all filling ingredients. Let sit until dough is ready.

PANS USED:

1 12 muffin pan
1 6 muffin pan

Make two circles of dough – one for the bottom and sides, and another for the top. Stab a hole in the top to allow steam and juices to escape.

Bake 350 F for 35 min.
