1 c butter
2 c sugar
3 c flour
2/3 c milk
2 tsp cream of tartar
1 tsp baking soda
Cream butter and sugar.
Add well beaten eggs.
Beat all and add milk.
Sift cream of tartar and soda into the flour.
Stir all together.
Pour into pans and bake as below:
* Bake at 300 F in two loaf pans (vintage recipe, no time indicated).
* Bake at 350 F for 20 min in two 9 inch round cake pans.
* Bake at 350 F for 20 min in cupcake pan.
Divide batter into three pans for a three layer cake.
Makes 24 to 30 cupcakes. (350 F for 20 min)
Can be baked in one 12 x 18 sheet cake pan. (350 F for 20 min)
JAMES BEARD’S CITRUS GLAZE:
3/4 cup freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
3/4 cup sugar
1 tablespoon finely grated orange peel
Mix orange juice, lemon juice, sugar, and orange peel together and drizzle e mixture over the still warm cake layers, being careful not to let it all soak into one spot; then pile the layers on top of each other. Let the cake cool.
